„Waldmeister“ is a German word meaning woodruff (Latin Galium odoratum, Lithuanian kvapusis lipikas). It is a herb with a very specific, easily recognizable aroma and taste, often described as:
sweetly herbal,
vanilla with almond or hay notes,
sometimes even reminiscent of marzipan or tonka.
This flavor is very popular in Germany, especially in sweets and drinks, for example:
Waldmeister syrup – often used for lemonade or beer mixes (e.g., „Berliner Weisse mit Schuss“).
Ice cream, jelly, candies – with Waldmeister flavor often have a bright green color.
Important: natural woodruff contains coumarin, which in large amounts can be toxic, so the food industry mostly uses artificial or safe extracts.
If you have seen Waldmeister flavor on product labels, it almost always means that sweetly herbal, German nostalgic flavor.
