Another powerful antioxidant provided to us by nature is astaxanthin, a naturally occurring red pigment found in many living organisms. Its primary source is plant-based, as it is exclusively synthesized by the unicellular microalgae Haematococcus pluvialis as a photoprotective substance for its cells and spores. It is a carotenoid belonging to the xanthophyll class, responsible for the characteristic color of some fish, including salmon and crustaceans. These animals cannot produce this pigment themselves and obtain it through their diet via zooplankton, which in turn accumulates it from microalgae. Another natural production source is the fermentation of the yeast Xanthophyllomyces dendrorhous or pigment extraction from crustacean by-products, such as the always popular Antarctic krill, but the richest source of astaxanthin, accumulating it in lipid vesicles precisely for protection against free radicals generated by UV rays during sun exposure, remains the microalgae Haematococcus pluvialis.
For example, in salmon, astaxanthin protects the fish, whose fats are rich in easily oxidizable Omega-3, specifically from oxidative stress damage. Without this protection, salmon could not withstand the massive oxidative attack that occurs during the movement against the current necessary for reproduction. This is the same oxidative stress experienced by those who exercise.
There are elements in nature that, due to their special molecular structure, are tens (if not hundreds) of times more powerful than many other better-known antioxidants, and one of them is astaxanthin, the absolute antioxidant of nature.
